Following on from the dedication of the restaurant in supporting local, native and Australian grown produce, and holding firm from the pressure to at least include one New Zealand Sauvignon Blanc, this list is and has always been, exclusively Australian. It includes some classic varieties that have had limited attention in Australia, such as Tempranillo, and others such as Grenache which have been around for a long time but are undergoing a revival. Here you will no doubt recognise some names that are institutions of the Australian wine industry, but you will also discover some emerging and boutique wines that have a very limited retail distribution and are incredibly hard to find.
